Yummy chocolate chip lactation cookies in 10 easy steps

I’m not sure about you but I am one of those people who would much prefer to make something if I think I can than spend my hard earned dollars on it. After the crazy birth with Eli by body was under so much stress that I struggled to get any milk supply having to stop breast feeding at just 3 months. The second time around I was so determined to make it work. After spending a bomb buying new boxes of lactation cookies weekly I thought to myself why don’t I try and make them myself for a fraction of the price. After speaking with a lovely mama I met on instagram @chasingmila she kindly gave me this delicious lactation cookie recipe. It is so simple even the kids can help you make it and so yummy I assure you, you will be fighting the household off for them.

Ingredients

  • 1 cup butter
  • 1 cup brown sugar
  • 4 tablespoons water
  • 2 tablespoons flaxseed meal
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1 teaspoon bicarb soda
  • 1 teaspoon salt
  • 3 cups oats
  • 1 cup chocolate chips
  • 2-4 tablespoons brewers yeast (I personally do 4)

Method

  1. Preheat oven to 200
  2. Mix the flaxseed meal and water and let sit for 3-5 minutes
  3. Beat butter and brown sugar well
  4. Add eggs and mix well
  5. Add flaxseed meal mix and vanilla, beat well
  6. Sift together flour, brewers yeast, baking soda and salt
  7. Add dry ingredients to butter mix
  8. Stir in oats and chocolate chips
  9. Scoop out mix onto baking tray (roughly the size of palm)
  10. Bake for 12 minutes or until golden brown
